Hey guys! Guess what? I could't wait for my birthday at the beginning of the year, on the 1st, my birthday was in 1, 2, 3, 4, 5, 6 DAYS!
So if you add it up... what day is it?? YESSS! October 6th! (I feel like Dora saying that, like Yess! *no one answers* And DO NOT tell me you didn't watch Dora as a small child... it's what molded this generation!) But wait......TODAY IS OCTOBER 6TH! so Happy Birthday to me! haha! Anyways you gotta love October! It is defiantly time for some pumpkin cream cheese muffins!! (My fall fave!) Emily makes 'em for us every fall! So can't wait for that! Plus I just love October because it means we're getting closer to anyway Victoria's gonna tell you some about the post... :)

Wellllllcome back!!! Ok, did September go by so fast, or is that just me....IT'S OCTOBER ALREADY??!?!?! WHAT??? I'm super duper excited for this month's post! Because on the 31st of dis month it's Trick or Treat (well, Halloween, but my family calls it Trick or Treat!) For me it feels like this year is just flying by was too fast! I mean it's already October! Are you kidding me? I don't know if anyone else feels this way, but when time is going this fast I think it's important to stop and remember the reason we're alive. This time of year everyone is so caught up in school, and getting ready for the holidays we tend to forget to thank God. We need to make sure everything we do is for his glory! Because that's what's most important. Just remember this October we have so much to be thankful for because God gives to us. After all it's the season the be thank full! Think of all that God has given you today.

Painted Pinecones!
These are supper easy and supper cute!! All you need is...
- acrylic paint (colors of your choice)
- a paint brush
- pinecones
(Tip! if you didn't buy the pinecones from a craft store and are worried about bugs in them, preheat your oven to 200 degrees and put them in for about 30 minutes! Bug free!)
Okay this next one is so easy I think I'm going to do it! (And I'm TOTALY going to do the pine cone one!! My grandparents have a ton of pinecones at there house!) Plus it's supper cute AND EASY!

For those days you just want to make one cookie! Well it's that day! I found you guys this awesome recipe and I hope you try it! I did yesterday and it was awesome and easy!

~Recipe~
1.5 to 2 TBSP Melted Butter
1 TBSP Sugar
1 TBSP Brown Sugar
1/8 TSP Vanilla
1 TBSP Brown Sugar

1/4 Cup Flour (go with a scant 1/4 cup vs a generous 1/4 cup)
Sprinkle Of Salt If Desired

PUMPKIN CREAM CHEESE MUFFINS!
These are those fall favorites I was talking about in my intro! We've had these so many times and loved them every time! You will love them! Just promise me you'll try them? :)
Pumpkin Cream Cheese Muffins
Ingredients
- 8 oz. cream cheese, softened
- 1 cup powdered sugar
- For the muffins:
- 3 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 tablespoon plus 1 teaspoon pumpkin pie spice
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 large eggs
- 2 cups sugar
- 2 cups pumpkin puree (see Note)
- 1¼ cups vegetable oil
- For the topping:
- ½ cup sugar
- 5 tablespoons flour
- 1½ teaspoons ground cinnamon
- 4 tablespoons cold unsalted butter, cut into pieces
For the filling:
Instructions
To prepare the filling, combine the cream cheese and powdered sugar in a medium bowl and mix well until blended and smooth. Transfer the mixture to a piece of plastic wrap and shape into a log about 1½-inches in diameter. Smooth the plastic wrap tightly around the log, and reinforce with a piece of foil. Transfer to the freezer and chill until at least slightly firm, at least 2 hours. The mixture will still be somewhat soft but firmer.
To make the muffins, preheat the oven to 350? F. Line muffin pans with paper liners. In a medium bowl, combine the flour, cinnamon, nutmeg, cloves, pumpkin pie spice, salt and baking soda; whisk to blend. In the bowl of an electric mixer combine the eggs, sugar, pumpkin puree and oil. Mix on medium-low speed until blended. With the mixer on low speed, add in the dry ingredients, mixing just until incorporated.
To make the topping, combine the sugar, flour and cinnamon in a small bowl; whisk to blend. Add in the butter pieces and cut into the dry ingredients with a pastry blender or two forks until the mixture is coarse and crumbly. I always get inpatient here and mix it together with my hands so that it looks like the texture of wet sand. I know you aren't supposed to do it this way but I'm impatient. Transfer to the refrigerator to chill until ready to use.
To assemble the muffins, fill each muffin well with a small amount of batter, just enough to cover the bottom of the liner (1-2 tablespoons). Slice the log of cream cheese filling into 24 equal pieces. Place a slice of the cream cheese mixture into each muffin well. You want to put the cream cheese lower than you think because it will rise a lot during the baking process. Divide the remaining batter among the muffin cups, placing on top of the cream cheese to cover completely. Sprinkle a small amount of the topping mixture over each of the muffin wells.
Bake for 20-25 minutes. Transfer to a wire rack and let cool completely before serving. I like them warm, cold, and room temperature.
Note: A standard sized can of pumpkin is 15 ounces, just shy of 2 cups (16 ounces). You could open another can if you want and freeze the extra or just use one can which is what I did. The amount is so little I don't think it makes a difference in the final product.
